Welcome! I’m Sarah, and I’m so happy you’re here. Make these incredibly simple, buttery shortbread cookies using just flour, butter, and powdered sugar. They require no mixer and bake quickly for a fast afternoon snack.

Ingredients

Scale
  • 1 cup unsalted butter, softened
  • 1/2 cup powdered sugar
  • 2 cups all-purpose flour

Instructions

  1. Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.
  2. In a medium bowl, cream together the softened butter and powdered sugar until the mixture is light and smooth. You can do this easily with a fork or spoon; no mixer is needed.
  3. Gradually mix in the flour until a soft dough forms. Do not overmix the dough.
  4. Roll the dough into small balls, about 1 inch in diameter, or press the dough into a 9×9 inch pan and score into squares.
  5. Place the dough balls on the prepared baking sheet, leaving space between them. You can press them down slightly with a fork to create a crisscross pattern if you like.
  6. Bake for 10 to 12 minutes, or until the edges are just barely turning light golden brown. They will look pale.
  7. Let the cookies cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely. They firm up as they cool.

Notes

  • For a crispier cookie, bake for an extra minute or two.
  • These cookies are excellent for holiday cookie shortcuts because they are so fast to prepare.
  • If you prefer a sweeter cookie, dust the cooled cookies lightly with extra powdered sugar.
