Ingredients
For the Dough: 1 cup warm milk, 2 1/4 teaspoons active dry yeast, 1/2 cup granulated sugar, 2 large eggs, 1/2 cup unsalted butter, melted, 1 teaspoon salt, 4 1/2 cups all-purpose flour
For the Cheesecake Filling: 8 ounces cream cheese, softened, 1/2 cup granulated sugar, 1 large egg, 1 teaspoon vanilla extract
For the Apple Crumble Filling: 2 cups diced apples, 1/4 cup granulated sugar, 1 teaspoon cinnamon, 1/4 teaspoon nutmeg
For the Crumble Topping: 1/2 cup all-purpose flour, 1/4 cup packed brown sugar, 1/4 cup cold unsalted butter, cut into pieces
For the Glaze: 1/2 cup powdered sugar, 2 tablespoons milk, 1/2 teaspoon vanilla extract
Instructions
Make the Dough: In a large bowl, combine warm milk and yeast. Let sit for 5 minutes until foamy. Stir in sugar, eggs, melted butter, and salt. Gradually add flour, mixing until a soft dough forms. Knead on a floured surface for 8-10 minutes until smooth and elastic. Place in a greased bowl, cover, and let rise in a warm place for 1-1.5 hours, or until doubled in size.
Prepare the Cheesecake Filling: In a medium bowl, beat cream cheese and sugar until smooth. Beat in egg and vanilla extract until combined.
Prepare the Apple Crumble Filling: In a separate bowl, toss diced apples with sugar and spices.
Prepare the Crumble Topping: In a small bowl, combine flour and brown sugar. Cut in cold butter with a pastry blender or your fingers until coarse crumbs form.
Assemble the Buns: Punch down the risen dough. Divide into 12 equal portions. Flatten each portion into a disc. Place a spoonful of cheesecake filling and a spoonful of apple crumble filling in the center of each disc. Pinch the edges of the dough together to seal, forming a bun. Place buns seam-side down on a baking sheet lined with parchment paper.
Second Rise: Cover the buns loosely and let rise for another 30-45 minutes.
Bake: Preheat oven to 375°F (190°C). Bake buns for 18-20 minutes, or until golden brown.
Add Crumble Topping: Remove buns from oven. Sprinkle the crumble topping evenly over the top of each bun. Return to oven and bake for another 5-7 minutes, until topping is golden.
Make the Glaze: While buns are cooling slightly, whisk together powdered sugar, milk, and vanilla extract until smooth. Drizzle over warm buns.
Notes
For make-ahead: Prepare the dough and let it complete its first rise. Punch it down, cover, and refrigerate overnight. In the morning, let the dough sit at room temperature for 30 minutes before dividing and assembling.
For freezing: Bake and cool the buns completely. Freeze in an airtight container for up to 1 month. Reheat in a 300°F (150°C) oven for 10-15 minutes.
You can substitute pears for apples in the apple crumble filling.
