A traditional homemade apple pie with a flaky crust and perfectly spiced apple filling, ideal for fall gatherings and holiday desserts.

Ingredients

Scale
  • 1 recipe for double pie crust
  • 6 medium apples (about 3 pounds), such as Honeycrisp, Gala, or Granny Smith, peeled, cored, and sliced 1/4-inch thick
  • 3/4 cup granulated sugar
  • 2 tablespoons all-purpose flour
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1/8 teaspoon ground cloves
  • 1 tablespoon lemon juice
  • 2 tablespoons unsalted butter, cut into small pieces
  • 1 large egg, beaten (for egg wash)
  • 1 tablespoon turbinado sugar (optional, for sprinkling)

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. On a lightly floured surface, roll out one disc of pie dough into a 12-inch circle. Carefully transfer it to a 9-inch pie plate. Trim the edges, leaving about a 1/2-inch overhang.
  3. In a large bowl, combine the sliced apples, granulated sugar, flour, cinnamon, nutmeg, cloves, and lemon juice. Toss gently to coat the apples evenly.
  4. Pour the apple mixture into the prepared pie crust. Dot the top of the filling with the small pieces of butter.
  5. Roll out the second disc of pie dough into another 12-inch circle. Place it over the apple filling. Trim the edges, leaving a 1-inch overhang. Fold the top crust edge under the bottom crust edge and crimp them together to seal. Cut several vents in the top crust to allow steam to escape.
  6. Brush the top crust with the beaten egg wash. If desired, sprinkle with turbinado sugar.
  7. Place the pie on a baking sheet (to catch any drips) and bake for 15 minutes at 425°F (220°C).
  8. Reduce the oven temperature to 375°F (190°C) and continue baking for another 35-45 minutes, or until the crust is golden brown and the filling is bubbling. If the crust starts to brown too quickly, you can loosely tent it with aluminum foil.
  9. Remove the pie from the oven and let it cool on a wire rack for at least 2-3 hours before slicing and serving. This allows the filling to set properly.

Notes

  • For a golden crust, ensure you use an egg wash.
  • Using a mix of apple varieties can add complexity to the flavor.
  • Allowing the pie to cool completely is crucial for the filling to set.
  • Consider using a store-bought pie crust for convenience.
