Juicy pork chops stuffed with sautéed apples, rosemary, onion, and garlic, finished in the oven with a simple pan sauce. Perfect for a cozy fall dinner or holiday main.

Ingredients

Scale
  • 4 (1-inch thick) bone-in pork chops
  • 1 tablespoon olive oil
  • 1 medium yellow onion, finely chopped
  • 2 cloves garlic, minced
  • 1 large apple, peeled, cored, and diced
  • 1 tablespoon fresh rosemary, chopped
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 cup chicken broth
  • 2 tablespoons butter
  • 1 tablespoon all-purpose flour

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Cut a pocket into the side of each pork chop, being careful not to cut all the way through.
  3. Heat olive oil in an oven-safe skillet over medium heat. Add the chopped onion and cook until softened, about 5 minutes.
  4. Add the minced garlic and cook for 1 minute more until fragrant.
  5. Stir in the diced apple and chopped rosemary. Cook for 5-7 minutes, until the apple is slightly tender. Season with salt and pepper.
  6. Remove the skillet from the heat. Spoon the apple and onion mixture into the pockets of the pork chops.
  7. Sear the stuffed pork chops in the same skillet over medium-high heat for 2-3 minutes per side, until browned.
  8. Transfer the skillet to the preheated oven. Bake for 15-20 minutes, or until the internal temperature of the pork reaches 145°F (63°C).
  9. Remove the pork chops from the skillet and set aside to rest.
  10. Return the skillet to the stovetop over medium heat. Add the chicken broth and scrape up any browned bits from the bottom of the pan.
  11. In a small bowl, whisk together the butter and flour to create a smooth paste. Whisk this paste into the skillet.
  12. Cook, whisking constantly, until the sauce thickens, about 2-3 minutes. Season with additional salt and pepper to taste.
  13. Serve the stuffed pork chops with the pan sauce.
