Ingredients
Scale
1 cup all-purpose flour
1 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg
1/2 teaspoon baking soda
1/4 teaspoon salt
1/2 cup (1 stick) unsalted butter, softened
1 cup granulated sugar
1 large egg
1 teaspoon vanilla extract
2 cups peeled and diced apples (about 2 medium apples)
Instructions
Preheat your oven to 350°F (175°C). Grease and flour an 8×8 inch baking pan.
In a medium bowl, whisk together the flour, cinnamon, nutmeg, baking soda, and salt.
In a large bowl, cream together the softened butter and granulated sugar until light and fluffy.
Beat in the egg and vanilla extract until well combined.
Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Do not overmix.
Gently fold in the diced apples.
Spread the batter evenly into the prepared baking pan.
Bake for 30-35 minutes, or until a toothpick inserted into the center comes out clean.
Let the squares cool completely in the pan before cutting into 9 or 12 squares.
Notes
For a richer flavor, you can add 1/2 cup of chopped walnuts or pecans to the batter.
Serve warm with a scoop of vanilla ice cream or a drizzle of caramel sauce.
These squares are great for meal planning and can be stored in an airtight container at room temperature for up to 3 days.
