Tender, fall-apart Asian beef short ribs with a sweet and savory umami glaze, perfect for a special occasion dinner.

Ingredients

Scale
  • 3 lbs bone-in beef short ribs
  • 1 cup soy sauce
  • 1/2 cup mirin
  • 1/4 cup brown sugar
  • 1/4 cup honey
  • 2 tablespoons rice vinegar
  • 1 tablespoon sesame oil
  • 4 cloves garlic, minced
  • 1 tablespoon fresh ginger, grated
  • 1 teaspoon black pepper
  • 1/2 cup water
  • 2 tablespoons cornstarch (for thickening glaze)

Instructions

  1. Preheat your oven to 325°F (160°C).
  2. Pat the beef short ribs dry with paper towels.
  3. In a large bowl, whisk together soy sauce, mirin, brown sugar, honey, rice vinegar, sesame oil, minced garlic, grated ginger, black pepper, and 1/2 cup water.
  4. Place the short ribs in a large Dutch oven or oven-safe pot.
  5. Pour the marinade over the short ribs, ensuring they are mostly submerged.
  6. Cover the pot tightly with a lid or aluminum foil.
  7. Braise in the preheated oven for 3 to 3.5 hours, or until the meat is very tender and falling off the bone.
  8. Remove the short ribs from the pot and set aside.
  9. Strain the braising liquid into a saucepan, discarding the solids.
  10. In a small bowl, whisk together the cornstarch with 2 tablespoons of cold water to create a slurry.
  11. Bring the braising liquid to a simmer over medium heat. Gradually whisk in the cornstarch slurry until the glaze thickens.
  12. Return the short ribs to the pot and spoon the thickened glaze over them.
  13. Broil for 2-3 minutes, watching carefully to prevent burning, until the glaze is caramelized and lacquered.
  14. Serve hot.

Notes

  • For a make-ahead option, prepare the ribs up to the braising step and refrigerate. Reheat in the oven before thickening the glaze.
  • Serve with steamed rice and your favorite Asian vegetables.
  • This recipe is great for meal planning and can be a centerpiece for a holiday menu.
