Ingredients
Scale
1 pound ground beef
1 onion, chopped
1 (15 ounce) can refried beans
1 (10 ounce) can red enchilada sauce
12 corn tortillas, cut into quarters
2 cups shredded cheddar cheese
1/2 cup shredded Monterey Jack cheese
1/4 cup chopped fresh cilantro (optional)
Instructions
Preheat your oven to 375°F (190°C).
In a large skillet, brown the ground beef with the chopped onion over medium-high heat. Drain off any excess grease.
Stir the refried beans and enchilada sauce into the skillet with the beef mixture. Heat through.
Spread about one-third of the beef mixture in the bottom of a 9×13 inch baking dish.
Layer one-third of the tortilla quarters over the beef mixture.
Sprinkle one-third of the cheddar cheese and Monterey Jack cheese over the tortillas.
Repeat the layers two more times, ending with a layer of cheese on top.
Bake for 20-25 minutes, or until the casserole is hot and bubbly and the cheese is melted and lightly browned.
Garnish with fresh cilantro, if desired, before serving.
Notes
This casserole is great for meal prep. Let it cool completely before covering and refrigerating. Reheat individual portions in the microwave or oven.
For a spicier casserole, add a pinch of cayenne pepper or some diced jalapeños to the beef mixture.
Serve with your favorite Tex-Mex toppings like sour cream, salsa, or guacamole.
