Prepare this easy, make-ahead Overnight Blueberry French Toast Casserole the night before. You wake up to a creamy, custardy, and fluffy breakfast bake ready for the oven, perfect for stress-free weekend brunch or holiday mornings.

Ingredients

Scale
  • 1 loaf (about 1 pound) French bread or challah, cut into 1-inch cubes
  • 2 cups fresh or frozen blueberries
  • 8 ounces cream cheese, softened and cut into small cubes
  • 6 large eggs
  • 2 cups milk
  • 1/2 cup granulated sugar
  • 1/4 cup packed light brown sugar
  • 2 teaspoons vanilla extract
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1/4 teaspoon salt
  • 1/4 cup maple syrup, plus more for serving

Instructions

  1. Lightly grease a 9×13 inch baking dish. Arrange half of the bread cubes evenly in the bottom of the dish. Sprinkle half of the blueberries over the bread layer. Dot the top with half of the cream cheese cubes.
  2. Repeat the layering process with the remaining bread cubes, blueberries, and cream cheese.
  3. In a large bowl, whisk together the eggs, milk, granulated sugar, brown sugar, vanilla extract, cinnamon, nutmeg, and salt until well combined. Whisk in the 1/4 cup of maple syrup.
  4. Slowly pour the egg mixture evenly over the bread and blueberry layers in the baking dish. Gently press down on the bread with a spatula to help it absorb the custard.
  5. Cover the baking dish tightly with plastic wrap. Refrigerate for at least 4 hours, or preferably overnight.
  6. When ready to bake, preheat your oven to 350 degrees Fahrenheit. Remove the plastic wrap from the dish.
  7. Bake for 45 to 55 minutes, or until the casserole is puffed, golden brown on top, and the center is set (a knife inserted near the center comes out mostly clean).
  8. Let the casserole rest for 10 minutes before slicing and serving warm with extra maple syrup.

Notes

  • For the best texture, use slightly stale or day-old bread. This helps the bread soak up the custard without becoming too mushy.
  • If using frozen blueberries, do not thaw them first; add them directly to the casserole.
  • If you need a quicker option, you can assemble this casserole and bake it after chilling for just 1 hour, though overnight soaking yields a superior custardy texture.
