Ingredients
Scale
1 cup creamy peanut butter
1/2 cup unsalted butter, softened
3 cups powdered sugar
1 teaspoon vanilla extract
1/4 teaspoon salt
1 package (14.4 ounces) graham crackers, whole sheets
12 ounces semi-sweet chocolate chips
1 tablespoon shortening or coconut oil
Instructions
Combine the peanut butter, softened butter, powdered sugar, vanilla extract, and salt in a medium bowl. Beat with an electric mixer until the mixture is smooth and creamy.
Break the graham crackers in half to create smaller, manageable squares.
Spread a layer of the peanut butter mixture evenly over one graham cracker half. Top with another graham cracker half to create a sandwich. Repeat until all crackers are used.
Place the peanut butter graham cracker sandwiches on a baking sheet lined with parchment paper. Chill in the refrigerator for 15 minutes to firm up the filling.
In a microwave-safe bowl, combine the chocolate chips and shortening or coconut oil. Microwave in 30-second intervals, stirring well after each, until the chocolate is completely melted and smooth.
Dip each chilled graham cracker sandwich into the melted chocolate, ensuring it is mostly covered, leaving a small circle of the peanut butter layer exposed, similar to a classic buckeye candy.
Return the dipped crackers to the parchment-lined baking sheet.
Refrigerate the Buckeye Graham Crackers for at least 30 minutes, or until the chocolate coating is fully set before serving.
Notes
For a cleaner dip, use a toothpick to gently hold the cracker while dipping, then remove the toothpick before the chocolate sets.
Store these no-bake desserts in an airtight container in the refrigerator for up to one week.
You can use milk chocolate or dark chocolate for the coating based on your preference.
This recipe is great for making ahead for holiday cookie trays or potlucks.
