Ingredients
Scale
1 pound boneless, skinless chicken breasts or tenders
1 tablespoon olive oil
1 teaspoon garlic powder
1/2 teaspoon salt
1/4 teaspoon black pepper
1/2 cup Buffalo wing sauce
4 large flour tortillas (or low carb wraps for an easy low carb option)
1/2 cup shredded cheddar or Monterey Jack cheese
1/2 cup shredded romaine lettuce
1/4 cup blue cheese dressing or ranch dressing
Optional: 2 tablespoons blue cheese crumbles
Instructions
Cut the chicken into bite-sized pieces or use tenders. Toss the chicken with olive oil, garlic powder, salt, and pepper.
Place the seasoned chicken in the air fryer basket in a single layer. Cook at 380°F (195°C) for 10 to 12 minutes, shaking the basket halfway through, until the chicken is cooked through and slightly crispy.
Transfer the cooked chicken to a medium bowl. Pour the Buffalo wing sauce over the chicken and toss until every piece is coated.
Warm the tortillas briefly in a dry skillet or microwave until pliable.
Assemble the wraps: Lay a tortilla flat. Layer cheese, lettuce, the sauced buffalo chicken, and then drizzle with blue cheese or ranch dressing. Add blue cheese crumbles if using.
Fold the sides of the tortilla inward, then roll tightly from the bottom up. Serve immediately for a weeknight dinner solution.
Notes
For meal prep wraps chicken, assemble the wraps just before eating to keep the lettuce crisp. You can store the cooked, sauced chicken separately for up to 3 days.
If you are following a specific diet, consider using low carb wraps or lettuce cups to make this a high protein wrap.
If you prefer a salad style filling, mix the sauced chicken with the dressing and lettuce first, similar to a buffalo chicken salad wrap, before adding it to the tortilla.
