Ingredients
Scale
1 sheet puff pastry, thawed
1 tablespoon olive oil
1 large yellow onion, thinly sliced
1/2 teaspoon salt
1/4 teaspoon black pepper
1 cup shredded Gruyère cheese
1 egg, beaten (for egg wash)
2 tablespoons hot honey
Instructions
Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
Heat olive oil in a skillet over medium-low heat. Add the sliced onion and salt and pepper. Cook, stirring occasionally, until the onions are deeply caramelized and tender, about 25-30 minutes. Let cool slightly.
Unfold the puff pastry sheet onto a lightly floured surface. Cut into 12 equal squares.
Place about 1 tablespoon of caramelized onions onto the center of each puff pastry square.
Top the onions with about 1 tablespoon of shredded Gruyère cheese.
Fold the corners of the puff pastry towards the center and pinch to seal, creating a small bite-sized package.
Place the bites on the prepared baking sheet. Brush the tops with the beaten egg wash.
Bake for 15-20 minutes, or until the puff pastry is golden brown and puffed.
Remove from oven and immediately drizzle with hot honey. Serve warm.
Notes
For a shortcut, you can use store-bought caramelized onion dip instead of caramelizing your own onions.
These bites can be assembled a few hours ahead of time and refrigerated. Bake just before serving.
You can substitute Swiss or Emmental cheese for Gruyère if needed.
Adjust the amount of hot honey to your spice preference.
