Make this hearty Cheeseburger Soup on the stovetop for a comforting meal that tastes like your favorite burger in a bowl. It features ground beef, potatoes, and sharp cheddar cheese in a creamy broth.

Ingredients

Scale
  • 1 pound ground beef
  • 1 medium yellow onion, chopped
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 4 cups beef broth
  • 2 medium russet potatoes, peeled and diced
  • 1 teaspoon dried Italian seasoning
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 cup all-purpose flour
  • 4 cups milk
  • 8 ounces sharp cheddar cheese, shredded
  • 4 ounces Velveeta or processed cheese, cubed
  • 4 slices bacon, cooked and crumbled (optional)
  • Toppings: extra shredded cheese, chopped pickles, diced raw onion

Instructions

  1. Brown the ground beef in a large pot or Dutch oven over medium heat. Drain off excess grease.
  2. Add the chopped onion, carrots, and celery to the pot with the beef. Cook until the vegetables soften, about 5 to 7 minutes.
  3. Pour in the beef broth. Add the diced potatoes, Italian seasoning, salt, and pepper. Bring the mixture to a boil, then reduce heat, cover, and simmer until the potatoes are tender, about 15 minutes.
  4. In a small bowl, whisk the flour with 1/2 cup of the milk until smooth. This creates a slurry.
  5. Pour the flour mixture and the remaining milk into the soup. Stir constantly and bring the soup to a gentle simmer until it thickens slightly. Do not let it boil rapidly.
  6. Reduce the heat to low. Gradually stir in the shredded cheddar cheese and the cubed processed cheese until both are completely melted and the soup is creamy.
  7. Stir in the crumbled bacon, if using. Heat through for 1 minute.
  8. Serve the cheeseburger soup hot, topped with extra cheese, chopped pickles, and diced raw onion for the full burger flavor experience.
