Ingredients

Scale
  • 1 pound ground beef
  • 1 onion, chopped
  • 1 can (10.75 oz) condensed cream of mushroom soup
  • 1/2 cup milk
  • 1 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 cups frozen diced potatoes, thawed
  • 1 cup shredded cheddar cheese

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a large skillet, brown the ground beef and chopped onion over medium heat. Drain off any excess grease.
  3. Stir in the condensed cream of mushroom soup, milk, salt, and pepper. Cook for 2 minutes, stirring constantly.
  4. Add the thawed diced potatoes to the skillet and mix well.
  5. Transfer the mixture to a 9×13 inch baking dish.
  6. Sprinkle the shredded cheddar cheese evenly over the top.
  7. Bake for 25-30 minutes, or until the casserole is hot and bubbly and the cheese is melted and golden.
  8. Let stand for 5 minutes before serving.

Notes

  • For a make-ahead option, assemble the casserole up to the cheese topping, cover tightly, and refrigerate for up to 24 hours. Add an extra 5-10 minutes to the baking time if baking from chilled.
  • You can substitute cream of chicken soup for cream of mushroom soup.
  • Add a layer of cooked, drained vegetables like peas or corn for extra flavor and nutrition.
  • Consider this a great alternative to some meal planning services.
