This recipe delivers a hearty, comforting Tex-Mex meal using crispy potatoes, seasoned ground beef, and melted cheese, all cooked in one skillet for minimal cleanup. It is an easy weeknight dinner.

Ingredients

Scale
  • 2 pounds russet potatoes, scrubbed and diced into 1/2-inch pieces
  • 2 tablespoons olive oil
  • 1 pound ground beef
  • 1 packet (1 ounce) taco seasoning mix
  • 1/2 cup water
  • 1 cup shredded cheddar cheese
  • 1 cup shredded Monterey Jack cheese
  • Optional toppings: sour cream, salsa, chopped green onions

Instructions

  1. Heat the olive oil in a large, oven-safe skillet over medium-high heat.
  2. Add the diced potatoes to the skillet in a single layer. Cook for 8 to 10 minutes, stirring occasionally, until the potatoes start to become golden brown and tender.
  3. Push the potatoes to one side of the skillet. Add the ground beef to the empty side. Cook the beef, breaking it apart with a spoon, until it is fully browned. Drain off any excess grease.
  4. Stir the taco seasoning mix and water into the ground beef. Bring the mixture to a simmer and cook for 2 to 3 minutes, allowing the sauce to thicken slightly.
  5. Stir the seasoned beef mixture together with the potatoes. Spread the mixture evenly across the bottom of the skillet.
  6. Sprinkle the shredded cheddar and Monterey Jack cheeses evenly over the top of the potato and beef mixture.
  7. Place the skillet under a preheated broiler for 2 to 4 minutes, watching closely, until the cheese is completely melted and bubbly.
  8. Remove the skillet from the oven. Serve immediately with your favorite toppings like sour cream, salsa, or green onions.

Notes

  • For crispier potatoes, you can parboil the diced potatoes for 5 minutes before adding them to the skillet.
  • This recipe works well as a budget friendly dinner using ground turkey instead of beef.
  • If you do not have an oven-safe skillet, transfer the mixture to a baking dish before adding the cheese and broiling.
