Bake these soft, chewy ginger molasses cookies featuring bold spice flavor and beautiful crackled tops. This easy recipe delivers comforting, aromatic holiday treats perfect for sharing.

Ingredients

Scale
  • 1 cup unsalted butter, softened
  • 3/4 cup granulated sugar, plus extra for rolling
  • 1 large egg
  • 1/2 cup unsulfured molasses
  • 2 1/4 cups all-purpose flour
  • 2 teaspoons baking soda
  • 1 teaspoon ground ginger
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground cloves
  • 1/4 teaspoon salt

Instructions

  1. Combine the softened butter and 3/4 cup of sugar in a large bowl. Beat with an electric mixer until the mixture is light and fluffy.
  2. Beat in the egg and molasses until fully combined. Scrape down the sides of the bowl as needed.
  3. In a separate medium bowl, whisk together the flour, baking soda, ground ginger, cinnamon, cloves, and salt.
  4. Gradually add the dry ingredients to the wet ingredients, mixing on low speed until just combined. Do not overmix the dough.
  5. Place the extra sugar for rolling into a shallow dish.
  6. Scoop the dough into balls, about 1.5 tablespoons each. Roll each ball thoroughly in the sugar until completely coated.
  7. Place the dough balls 2 inches apart on baking sheets lined with parchment paper.
  8. Bake in a preheated oven at 350°F (175°C) for 9 to 11 minutes. The edges should look set, but the centers should still appear soft.
  9. Remove the cookies from the oven and let them cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely. The cookies will flatten and develop crackled tops as they cool.

Notes

  • For extra intense ginger flavor, add 1 teaspoon of ground white pepper to the dry ingredients.
  • Chill the dough for 30 minutes before rolling and baking to help the cookies maintain a thicker shape.
  • These cookies are excellent for holiday baking and can be stored in an airtight container for up to one week. Consider this recipe when looking at meal planning for holiday events.
