Make this simple, comforting chicken broccoli rice casserole for a family-friendly weeknight dinner. It features tender chicken, broccoli, and rice baked in a rich, cheesy sauce.

Ingredients

Scale
  • 2 cups cooked white rice
  • 1 pound boneless, skinless chicken breasts or thighs, cooked and shredded or cubed
  • 2 cups fresh or frozen broccoli florets, lightly steamed
  • 1 (10.5 ounce) can condensed cream of chicken soup
  • 1 (10.5 ounce) can condensed cream of mushroom soup
  • 1 cup chicken broth
  • 1 cup shredded sharp cheddar cheese, plus extra for topping
  • 1/2 cup mayonnaise or plain Greek yogurt (for creaminess)
  • 1 teaspoon onion powder
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon black pepper
  • 1/2 cup crushed butter crackers or breadcrumbs (optional topping)

Instructions

  1. Preheat your oven to 375°F (190°C). Lightly grease a 9×13 inch baking dish.
  2. In a large bowl, combine the cooked rice, cooked chicken, and steamed broccoli florets.
  3. In a separate medium bowl, whisk together the cream of chicken soup, cream of mushroom soup, chicken broth, 1 cup of cheddar cheese, mayonnaise or yogurt, onion powder, garlic powder, and pepper until smooth.
  4. Pour the cheese sauce mixture over the chicken, rice, and broccoli mixture. Stir gently until all ingredients are evenly coated.
  5. Transfer the mixture to the prepared baking dish.
  6. Sprinkle the remaining cheddar cheese evenly over the top of the casserole. If using, mix the crushed crackers or breadcrumbs with 1 tablespoon of melted butter and sprinkle over the cheese layer.
  7. Bake for 25 to 30 minutes, or until the casserole is hot throughout and the cheese topping is melted and lightly golden brown.
  8. Let the casserole rest for 5 minutes before serving.

Notes

  • For make-ahead preparation, assemble the entire casserole, cover it tightly with foil, and refrigerate for up to 2 days. Add 10-15 minutes to the baking time if baking directly from the refrigerator.
  • If you are looking for alternatives to traditional soup bases, consider using a homemade cheese sauce or exploring options related to meal planning for easier weeknight execution.
  • You can substitute ground chicken for cubed chicken, cooking it first and draining any excess fat before mixing.
