Welcome! I’m Sarah, and I’m so happy you’re here. Make this satisfying Chicken Caesar Pasta Salad in just 30 minutes. It combines tender chicken, crisp romaine, and a creamy Caesar dressing coating rotini pasta. This recipe is ideal for quick dinner ideas, high protein lunch prep, or your next potluck salad.

Ingredients

Scale
  • 1 pound rotini pasta
  • 2 cups cooked, shredded or diced chicken (use rotisserie chicken for speed)
  • 1 head romaine lettuce, chopped
  • 1 cup grated Parmesan cheese, plus extra for topping
  • 1/2 cup mayonnaise
  • 1/4 cup olive oil
  • 2 tablespoons fresh lemon juice
  • 1 tablespoon Dijon mustard
  • 2 cloves garlic, minced
  • 1 teaspoon Worcestershire sauce
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon salt
  • 1/4 cup grated Parmesan cheese (for dressing)
  • 1/2 cup homemade croutons (optional)

Instructions

  1. Cook the rotini pasta according to package directions until al dente. Drain the pasta and rinse briefly with cold water to stop the cooking process. Set aside.
  2. While the pasta cooks, prepare the creamy Caesar dressing. In a small bowl, whisk together the mayonnaise, olive oil, lemon juice, Dijon mustard, minced garlic, Worcestershire sauce, pepper, and salt. Whisk in the 1/4 cup of grated Parmesan cheese until the dressing is smooth.
  3. In a large bowl, combine the cooled pasta, cooked chicken, and chopped romaine lettuce.
  4. Pour the creamy Caesar dressing over the pasta mixture. Toss gently until all ingredients are evenly coated.
  5. Stir in the 1 cup of grated Parmesan cheese.
  6. Taste the salad and adjust salt or pepper if needed.
  7. If making ahead for meal prep, cover and chill for at least 30 minutes to allow flavors to meld. If serving immediately, top individual portions with croutons and extra Parmesan cheese.

Notes

  • For the fastest preparation, use pre-cooked grilled chicken strips or rotisserie chicken.
  • This salad travels well for picnics or potluck salad contributions when kept chilled.
  • If you prefer a tangier dressing, add 1 teaspoon of anchovy paste to the dressing ingredients.
