Ingredients

Scale
  • 1 tablespoon vegetable oil
  • 1 pound ground chicken
  • 1/2 cup finely chopped water chestnuts
  • 1/2 cup finely chopped mushrooms (white or cremini)
  • 1/4 cup finely chopped green onions (white parts only)
  • 2 cloves garlic, minced
  • 1 teaspoon grated fresh ginger
  • 1/4 cup hoisin sauce
  • 2 tablespoons soy sauce (low sodium preferred)
  • 1 tablespoon rice vinegar
  • 1 tablespoon brown sugar
  • 1 teaspoon sesame oil
  • 1/4 teaspoon black pepper
  • 1 head butter lettuce or iceberg lettuce, leaves separated and washed
  • Optional garnish: chopped peanuts, cilantro, remaining green onion tops

Instructions

  1. Heat the vegetable oil in a large skillet or wok over medium-high heat.
  2. Add the ground chicken to the skillet. Cook, breaking it up with a spoon, until it is fully browned and no pink remains. Drain off any excess grease.
  3. Add the chopped water chestnuts, mushrooms, and the white parts of the green onions to the skillet with the chicken. Cook for 3 to 4 minutes until the vegetables soften slightly.
  4. Stir in the minced garlic and grated ginger. Cook for 1 minute until fragrant.
  5. In a small bowl, whisk together the hoisin sauce, soy sauce, rice vinegar, brown sugar, sesame oil, and black pepper to create the lettuce wrap sauce.
  6. Pour the sauce mixture over the chicken and vegetables in the skillet. Stir well to coat everything evenly. Cook for 1 to 2 minutes until the sauce thickens slightly.
  7. Remove the skillet from the heat.
  8. Arrange the washed and dried lettuce cups on a serving platter.
  9. Spoon the savory chicken filling into the lettuce cups.
  10. Garnish with chopped peanuts, cilantro, and the green onion tops, if using. Serve immediately.

Notes

  • For extra crunch, you can briefly sauté the water chestnuts separately until they are slightly crispy before adding them to the chicken mixture.
  • If you prefer a less sweet filling, reduce the brown sugar by half a teaspoon.
  • Use large, crisp lettuce leaves like butter lettuce or iceberg for the best structure when holding the filling.
