Ingredients

Scale
  • 2 cups cooked white rice
  • 1.5 lbs boneless, skinless chicken breasts, cut into 1-inch pieces
  • 1 tablespoon olive oil
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • 1/2 teaspoon smoked paprika
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 cup frozen or fresh corn kernels
  • 1/4 cup mayonnaise or Greek yogurt
  • 2 tablespoons lime juice, fresh squeezed
  • 1/4 cup cotija cheese, crumbled (optional)
  • 2 tablespoons chopped fresh cilantro
  • Optional: Tajín seasoning for garnish

Instructions

  1. Cook the rice according to package directions. Keep warm.
  2. In a medium bowl, toss the cut chicken pieces with chili powder, cumin, smoked paprika, salt, and pepper until evenly coated.
  3. Heat the olive oil in a large skillet over medium-high heat. Add the seasoned chicken and cook for 6-8 minutes, turning occasionally, until cooked through and lightly browned. Remove chicken from the skillet and set aside.
  4. In the same skillet, add the corn kernels. Cook for 3-4 minutes until slightly charred.
  5. While the corn cooks, prepare the sauce: Whisk together the mayonnaise (or yogurt), lime juice, and a pinch of salt in a small bowl.
  6. Return the cooked chicken to the skillet with the corn. Stir briefly to combine and heat through.
  7. To assemble your high protein chicken rice bowl, divide the cooked rice among serving bowls.
  8. Top the rice with the chicken and corn mixture.
  9. Drizzle generously with the lime-mayo sauce.
  10. Garnish with crumbled cotija cheese and fresh cilantro. Sprinkle with Tajín if you like extra spice.

Notes

  • For meal prep, store the rice, chicken/corn mixture, and sauce in separate airtight containers. Assemble just before eating.
  • If you prefer a spicier kick, add 1/4 teaspoon of cayenne pepper to the chicken seasoning mix.
  • You can substitute chicken thighs for breasts if you prefer darker meat. Adjust cooking time slightly.
