Ingredients
Scale
1 1/2 cups all-purpose flour
1 cup granulated sugar
1/2 cup unsweetened cocoa powder
1 teaspoon baking soda
1/2 teaspoon salt
1 cup cold water
1 teaspoon vanilla extract
1/2 cup vegetable oil
1 cup packed brown sugar
1 1/2 cups boiling water
Instructions
Preheat your oven to 350°F (175°C). Lightly grease an 8×8 inch baking pan.
In a large bowl, whisk together the flour, granulated sugar, cocoa powder, baking soda, and salt.
Add the cold water, vanilla extract, and vegetable oil to the dry ingredients. Mix until just combined. Do not overmix.
Pour the batter evenly into the prepared baking pan.
In a separate bowl, sprinkle the brown sugar over the batter surface.
Carefully pour the 1 1/2 cups of boiling water over the brown sugar layer. Do not stir.
Bake for 35 to 40 minutes. The top will look like cake, and the bottom will form the pudding sauce.
Remove from the oven and let it cool for 5 minutes before serving.
