Make soft, chewy, melt-in-your-mouth Christmas cookies using a simple cream cheese and cake mix base, finished with festive sprinkles.

Ingredients

Scale
  • 1 box (15.25 ounces) yellow cake mix
  • 1/2 cup unsalted butter, softened
  • 1 package (8 ounces) cream cheese, softened
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 cup powdered sugar, for rolling
  • 1/4 cup red and green sprinkles

Instructions

  1. Preheat your oven to 350°F (175°C). Line baking sheets with parchment paper.
  2. In a large bowl, combine the yellow cake mix, softened butter, softened cream cheese, egg, and vanilla extract. Mix with an electric mixer until just combined into a thick dough. Do not overmix.
  3. Place the powdered sugar in a shallow dish. Place the sprinkles in another shallow dish.
  4. Scoop the dough into balls, about 1 inch in diameter. Roll each ball first in the powdered sugar until fully coated, then roll lightly in the sprinkles.
  5. Place the coated dough balls onto the prepared baking sheets, leaving about 2 inches between them.
  6. Bake for 10 to 12 minutes. The edges should look set, but the centers will still look slightly soft and puffy.
  7. Let the cookies cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely. They will flatten and become gooey as they cool.

Notes

  • For the best gooey texture, do not overbake the cookies. Pull them out when the centers still look slightly underdone.
  • You can substitute the yellow cake mix with white cake mix if preferred.
  • Store cooled cookies in an airtight container at room temperature for up to 4 days.
