Make soft, buttery Christmas Sugar Cookie Bars without the fuss of rolling or cutting. These sheet pan sugar cookies are topped with rich frosting and festive sprinkles, making them the perfect quick holiday treat for any gathering.

Ingredients

Scale
  • 1 cup unsalted butter, softened
  • 1 1/2 cups granulated sugar
  • 2 large eggs
  • 1 tablespoon vanilla extract
  • 4 cups all-purpose flour
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1/2 cup milk
  • 1 cup powdered sugar (for frosting)
  • 1/2 cup unsalted butter, softened (for frosting)
  • 2 tablespoons milk or heavy cream (for frosting)
  • 1 teaspoon vanilla extract (for frosting)
  • Pinch of salt (for frosting)
  • Colorful sprinkles for decoration

Instructions

  1. Preheat your oven to 350 degrees F. Line a 9×13 inch baking pan with parchment paper, leaving an overhang on the sides for easy removal. Lightly grease the paper.
  2. In a large bowl, beat the softened butter and granulated sugar together with an electric mixer until the mixture is light and fluffy. This takes about 3 minutes.
  3. Beat in the eggs one at a time, mixing well after each addition. Stir in the vanilla extract.
  4. In a separate bowl, whisk together the flour, baking powder, and salt.
  5. Gradually add the dry ingredients to the wet ingredients, alternating with the milk. Mix on low speed until just combined. Do not overmix the dough.
  6. Press the cookie dough evenly into the prepared baking pan. Use the bottom of a glass or your fingers (lightly floured if sticky) to press it down firmly.
  7. Bake for 20 to 25 minutes, or until the edges are lightly golden brown and the center is set. You want these soft baked bars to remain slightly underdone in the center for chewiness.
  8. Let the bars cool completely in the pan on a wire rack. This step is important before frosting.
  9. Prepare the frosting: In a medium bowl, beat the softened butter until smooth. Gradually add the powdered sugar, mixing until combined. Add the milk, vanilla extract, and salt. Beat on medium-high speed until the frosting is light and creamy.
  10. Spread the frosting evenly over the cooled cookie bars.
  11. Immediately decorate with colorful sprinkles before the frosting sets.
  12. Once the frosting is set, use the parchment paper overhang to lift the bars from the pan. Cut into squares for serving.

Notes

  • For the softest texture, avoid overbaking. The center should look just set when you remove them from the oven.
  • You can substitute the buttercream frosting with a cream cheese frosting for a slight tang.
  • These are great make-ahead Christmas sweets; store them covered at room temperature for up to 3 days.
