Ingredients
Scale
2 cups pecan halves
1 large egg white
1/4 cup granulated sugar
1 tablespoon ground cinnamon
1/2 teaspoon salt
1/4 teaspoon vanilla extract
Instructions
Preheat your oven to 300 degrees Fahrenheit. Line a baking sheet with parchment paper.
In a medium bowl, whisk the egg white until it becomes slightly foamy.
Add the pecans to the egg white and toss until they are evenly coated.
In a separate small bowl, mix the sugar, cinnamon, and salt.
Sprinkle the sugar mixture over the coated pecans and toss again until every pecan piece has a dry coating. Stir in the vanilla extract.
Spread the coated pecans in a single layer on the prepared baking sheet.
Bake for 30 to 40 minutes, stirring every 10 minutes to prevent burning and promote even roasting. The nuts are done when the coating looks dry and the pecans are fragrant.
Remove the nuts from the oven. Let them cool completely on the baking sheet. They will become crunchy as they cool.
Store the cooled cinnamon sugar pecans in an airtight container.
Notes
For a sweet and salty flavor, add 1/4 teaspoon of fine sea salt to the sugar mixture.
These pecans are excellent sprinkled over green salads or used as a topping for ice cream.
