Make a refreshing and zesty salad using seasonal citrus fruits, crisp fennel, and crunchy pistachios, finished with a simple honey-citrus vinaigrette.

Ingredients

Scale
  • 3 large oranges, peeled and segmented
  • 2 ruby red grapefruits, peeled and segmented
  • 2 tangerines or clementines, peeled and segmented
  • 1 small fennel bulb, thinly shaved
  • 1/2 cup shelled pistachios, lightly toasted
  • 1/4 cup fresh mint leaves, chopped
  • For the Vinaigrette:
  • 3 tablespoons fresh orange juice
  • 1 tablespoon fresh lemon juice
  • 1 tablespoon honey
  • 1/4 cup olive oil
  • Salt and black pepper to taste

Instructions

  1. Prepare the citrus: Peel and segment all oranges, grapefruits, and tangerines over a bowl to catch any juice. Set the fruit aside.
  2. Prepare the fennel: Trim the stalks and fronds from the fennel bulb. Slice the bulb very thinly using a mandoline or sharp knife. Add the shaved fennel to the bowl with the citrus segments.
  3. Make the vinaigrette: In a small jar, combine the orange juice, lemon juice, and honey. Shake well until the honey dissolves. Slowly drizzle in the olive oil while whisking or shaking until the dressing emulsifies. Season with salt and pepper.
  4. Assemble the salad: In a large bowl, gently combine the citrus segments, shaved fennel, and chopped mint.
  5. Dress the salad: Pour about half of the vinaigrette over the salad and toss gently to coat. Add more dressing as needed, but avoid over-dressing.
  6. Finish and serve: Sprinkle the toasted pistachios over the salad just before serving. This salad is a great light option if you are considering alternatives to meal planning services.

Notes

  • For extra flavor, add thinly sliced red onion to the salad mixture.
  • If you want a savory addition, thin slices of prosciutto pair well with this bright flavor profile.
  • Toast the pistachios in a dry skillet over medium heat for 3-5 minutes until fragrant.
