Ingredients
Scale
2 pounds ground beef (80/20 recommended)
1 cup breadcrumbs
1/2 cup milk
1/4 cup finely chopped onion
2 large eggs, lightly beaten
2 tablespoons ketchup, plus more for glaze
1 teaspoon salt
1/2 teaspoon black pepper
1/2 teaspoon garlic powder
1/4 teaspoon dried thyme
1/4 cup chopped fresh parsley
Instructions
Preheat your oven to 350°F (175°C).
In a large bowl, combine the ground beef, breadcrumbs, milk, chopped onion, beaten eggs, 2 tablespoons of ketchup, salt, pepper, garlic powder, and thyme.
Mix gently with your hands until just combined. Do not overmix.
Stir in the chopped parsley.
Shape the mixture into a loaf shape on a baking sheet lined with parchment paper or in a loaf pan.
Spread additional ketchup over the top of the meatloaf for a glaze.
Bake for 60-75 minutes, or until the internal temperature reaches 160°F (71°C).
Let the meatloaf rest for 10 minutes before slicing and serving.
Notes
For an extra moist meatloaf, you can add a tablespoon of Worcestershire sauce to the mixture.
You can customize the glaze by adding a bit of brown sugar or mustard to the ketchup.
This meatloaf pairs well with mashed potatoes and green beans.
