Make this creamy, flavorful Thai coconut curry soup quickly. This recipe uses tofu for a vegetarian option, focusing on aromatic spices and a fast cooking time suitable for weeknights.

Ingredients

Scale
  • 1 tablespoon coconut oil
  • 1 medium yellow onion, diced
  • 2 cloves garlic, minced
  • 1 red bell pepper, diced
  • 1 tablespoon fresh ginger, grated
  • 2 tablespoons red curry paste
  • 1 (13.5 ounce) can full-fat coconut milk
  • 4 cups vegetable broth
  • 1 tablespoon soy sauce or tamari
  • 1 teaspoon brown sugar
  • 1 block (14 ounces) extra-firm tofu, pressed and cubed
  • 1 cup sliced mushrooms
  • 1 cup chopped broccoli florets
  • Juice of 1 lime
  • Fresh cilantro, chopped, for garnish
  • Cooked rice noodles or rice, for serving

Instructions

  1. Heat coconut oil in a large pot or Dutch oven over medium heat. Add onion and cook until softened, about 4 minutes.
  2. Add garlic, ginger, and red bell pepper. Cook for 2 minutes until fragrant.
  3. Stir in the red curry paste and cook for 1 minute, stirring constantly.
  4. Pour in the coconut milk and vegetable broth. Add soy sauce/tamari and brown sugar. Bring the mixture to a simmer.
  5. Add the cubed tofu, mushrooms, and broccoli to the simmering broth. Cook for 8 to 10 minutes, or until the vegetables are tender-crisp.
  6. Remove the pot from the heat. Stir in the lime juice.
  7. Taste the soup and adjust seasoning if needed. Serve hot over rice noodles or rice, garnished with fresh cilantro.

Notes

  • For a crispier tofu texture, pan-fry the tofu cubes separately in a little oil until golden brown before adding them to the soup in step 5.
  • If you prefer chicken, substitute 1 pound of diced chicken breast for the tofu and cook it in the broth until done before adding the vegetables.
  • This recipe is naturally gluten-free if you use tamari instead of soy sauce. It fits well into a general meal planning approach for easy dinners.
