Make ultra-rich, fudgy, and chewy homemade Cosmic Brownies that taste better than the store-bought classic. This easy from-scratch recipe uses cocoa powder and features the signature chocolate ganache and colorful sprinkles.
1/2 cup rainbow candy sprinkles (M&M’s or similar)
Instructions
Preheat your oven to 350°F (175°C). Grease and line an 8×8 inch baking pan with parchment paper, leaving an overhang for easy removal.
In a large bowl, whisk together the melted butter, eggs, granulated sugar, and brown sugar until well combined. Stir in the vanilla extract.
In a separate bowl, whisk together the flour, cocoa powder, salt, and baking powder.
Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Do not overmix. Fold in the chocolate chips.
Spread the batter evenly into the prepared pan. Bake for 25 to 30 minutes. A toothpick inserted near the center should come out with moist crumbs attached, not wet batter.
Let the brownies cool completely in the pan on a wire rack.
Prepare the ganache: Place the chopped chocolate in a medium heatproof bowl. Heat the heavy cream and corn syrup (if using) in a small saucepan until it just simmers. Pour the hot cream mixture over the chocolate. Let it sit for 5 minutes without stirring.
Whisk the chocolate and cream mixture until smooth and glossy. Let the ganache cool slightly until it thickens enough to spread, about 10 minutes.
Pour the slightly cooled ganache over the cooled brownies and spread it evenly across the top.
Immediately sprinkle the top generously with the rainbow candy sprinkles.
Allow the ganache to set completely before lifting the brownies out of the pan using the parchment overhang and cutting them into squares.
Notes
For the fudgiest texture, do not overbake the brownies. The center should remain slightly underdone when you remove them from the oven.
Chilling the brownies for 30 minutes after frosting helps the ganache set firmly before slicing.
