Make this quick, creamy, high-protein cottage cheese queso dip in under five minutes. It is a lighter, guilt-free alternative to traditional queso, perfect for dipping chips or topping tacos.

Ingredients

Scale
  • 1 cup low-fat cottage cheese
  • 1/2 cup shredded cheddar cheese (or Mexican blend)
  • 1/4 cup salsa (mild or medium)
  • 1 tablespoon taco seasoning
  • 1–2 tablespoons milk or water (optional, for thinning)
  • 1 small can diced green chiles (optional)

Instructions

  1. Place the cottage cheese, shredded cheese, salsa, and taco seasoning into a blender or food processor.
  2. Blend until the mixture is completely smooth and creamy. Stop and scrape down the sides as needed.
  3. If the dip is too thick, add milk or water one tablespoon at a time until you reach your desired consistency.
  4. Transfer the blended mixture to a microwave-safe bowl.
  5. Microwave on high for 60 to 90 seconds, stirring halfway through, until the queso is hot and fully melted.
  6. Serve immediately with tortilla chips, fresh vegetables, or as a topping for nachos.

Notes

  • For a spicier dip, add a few dashes of hot sauce or a pinch of cayenne pepper before blending.
  • If you prefer a baked version, transfer the blended mixture to a small oven-safe dish, top with extra cheese, and bake at 375°F (190°C) for 10 minutes until bubbly.
  • This dip works well as part of a larger meal plan, similar to what you might find with some weight loss programs.
