Ingredients

Scale
  • 1 (15 ounce) can black beans, rinsed and drained
  • 1 (15 ounce) can black-eyed peas, rinsed and drained
  • 1 cup frozen or canned corn, thawed or drained
  • 1 cup chopped red onion
  • 1 cup chopped fresh tomatoes
  • 1 cup chopped bell pepper (any color)
  • 1/2 cup chopped fresh cilantro
  • 1 ripe avocado, diced (optional)
  • 1/4 cup olive oil
  • 1/4 cup fresh lime juice
  • 1 teaspoon ground cumin
  • 1/2 teaspoon chili powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • Tortilla chips, for serving

Instructions

  1. Prepare all vegetables: chop the red onion, tomatoes, and bell pepper. Rinse and drain the black beans, black-eyed peas, and corn.
  2. In a large bowl, combine the rinsed beans, peas, corn, chopped onion, tomatoes, and bell pepper. Add the cilantro.
  3. In a small bowl, whisk together the olive oil, lime juice, cumin, chili powder, salt, and pepper to create the zesty lime dressing.
  4. Pour the dressing over the bean and vegetable mixture. Gently fold everything together until well combined.
  5. If using avocado, gently fold in the diced avocado just before serving to prevent browning.
  6. Cover the bowl and chill the Cowboy Caviar for at least 30 minutes to allow the flavors to meld. This is a great make ahead dip.
  7. Serve your fresh salsa cold or at room temperature with tortilla chips or as a healthy side salad.

Notes

  • For the best flavor, make this dip a few hours ahead of time. The chilling period lets the vegetables absorb the zesty lime dressing.
  • If you are preparing this for a large crowd or potluck, keep the avocado out until the last minute, or substitute it with chopped cucumber for extra crunch if making it far in advance.
  • This recipe is easily doubled for big game day gatherings.
