These festive cranberry tortilla roll ups are a perfect make-ahead appetizer for holidays and potlucks. They feature a cream cheese base, slice cleanly, and travel well, adding color to any snack board.

Ingredients

Scale
  • 8 ounces cream cheese, softened
  • 1/2 cup dried cranberries, chopped
  • 1/4 cup chopped pecans or walnuts (optional)
  • 2 tablespoons chopped fresh parsley
  • 1 teaspoon lemon zest
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 4 large (10-inch) flour tortillas

Instructions

  1. In a medium bowl, combine the softened cream cheese, chopped dried cranberries, chopped nuts (if using), chopped parsley, lemon zest, salt, and pepper. Mix until well combined.
  2. Lay one tortilla flat on a clean surface. Spread about one-quarter of the cream cheese mixture evenly over the tortilla, leaving a small border around the edges.
  3. Tightly roll up the tortilla, starting from one edge.
  4. Wrap the rolled tortilla tightly in plastic wrap. Repeat with the remaining tortillas and cream cheese mixture.
  5. Refrigerate the rolled tortillas for at least 1 hour, or until firm. This makes them easier to slice.
  6. Before serving, unwrap the chilled tortillas and slice them into 1/2-inch thick pinwheels.
  7. Arrange the cranberry tortilla roll ups on a serving platter.

Notes

  • For a smoother texture, you can add a tablespoon of sour cream or Greek yogurt to the cream cheese mixture.
  • If you don’t have dried cranberries, you can substitute with finely chopped dried cherries or apricots.
  • These can be made up to 24 hours in advance and kept refrigerated.
  • These are great for busy weeknights and can be part of your meal planning.
