This recipe delivers rich, velvety, steakhouse-style creamed spinach, perfect as a decadent side dish for steak or holiday meals. It uses fresh spinach, cream cheese, heavy cream, and Parmesan for maximum flavor.

Ingredients

Scale
  • 1 tablespoon unsalted butter
  • 2 cloves garlic, minced
  • 1 shallot, finely minced (optional)
  • 1 (10 ounce) package frozen chopped spinach, thawed and squeezed very dry OR 1 pound fresh spinach, wilted and squeezed very dry
  • 1/4 cup heavy cream
  • 2 ounces cream cheese, cut into cubes
  • 1/4 cup grated Parmesan cheese
  • 1/8 teaspoon ground nutmeg
  • Salt and black pepper to taste

Instructions

  1. If using fresh spinach, wilt it in a large skillet over medium heat until fully wilted. Drain well and squeeze out as much water as possible using a clean kitchen towel or paper towels. Chop the spinach roughly. If using frozen, ensure it is fully thawed and squeezed completely dry.
  2. In a medium saucepan, melt the butter over medium heat. Add the minced garlic and shallot (if using) and cook until fragrant, about 1 minute. Do not let the garlic brown.
  3. Add the heavy cream to the saucepan and bring it to a gentle simmer.
  4. Reduce the heat to low. Add the cream cheese cubes, stirring constantly until the cream cheese has completely melted into the cream, creating a smooth base.
  5. Stir in the grated Parmesan cheese and the nutmeg. Season with salt and pepper to your taste.
  6. Fold in the prepared, dry spinach until it is fully coated in the cream sauce and heated through. This should take about 2 to 3 minutes.
  7. Serve this rich and velvety spinach immediately as a perfect side dish for steak or your next holiday dinner.

Notes

  • Squeezing the moisture out of the spinach is the most important step for achieving a thick, creamy sauce rather than a watery one.
  • For an extra restaurant touch, you can add a pinch of white pepper along with the black pepper.
  • If you prefer a smoother sauce, use a whisk to break up any remaining lumps of cream cheese before adding the spinach.
