This One-Pot Creamy Lasagna Soup delivers all the comforting flavor of classic lasagna in a quick, hearty soup format. It is perfect for busy weeknights when you need satisfying comfort food without the heavy lifting.

Ingredients

Scale
  • 1 tablespoon olive oil
  • 1 pound ground beef or Italian sausage
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1/2 teaspoon dried basil
  • 1/4 teaspoon red pepper flakes (optional)
  • 4 cups beef broth
  • 1 (28 ounce) can crushed tomatoes
  • 1 (15 ounce) can tomato sauce
  • 8 ounces lasagna noodles, broken into small pieces
  • 1/2 cup heavy cream
  • 1 cup whole milk
  • 1 cup shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • 1/2 cup ricotta cheese (for topping, optional)
  • Salt and black pepper to taste

Instructions

  1. Heat the olive oil in a large pot or Dutch oven over medium heat. Add the ground meat and cook until browned. Drain off any excess grease.
  2. Add the chopped onion to the pot and cook until softened, about 5 minutes.
  3. Stir in the minced garlic, oregano, basil, and red pepper flakes. Cook for 1 minute until fragrant.
  4. Pour in the beef broth, crushed tomatoes, and tomato sauce. Bring the mixture to a simmer.
  5. Add the broken lasagna noodles to the simmering broth. Cook according to the noodle package directions, usually 10 to 12 minutes, stirring occasionally to prevent sticking.
  6. Once the noodles are tender, reduce the heat to low. Stir in the heavy cream and milk until combined. Do not let the soup boil after adding the dairy.
  7. Stir in the mozzarella cheese and Parmesan cheese until the cheese melts into the soup, creating a creamy texture. Season with salt and pepper to your taste.
  8. Serve the hearty dinner soup hot, topping each bowl with a dollop of ricotta cheese, if using.

Notes

  • For a richer flavor, use Italian sausage instead of ground beef.
  • If you prefer a thicker soup, break the lasagna noodles into smaller pieces before adding them.
  • This recipe is great for meal prep; store leftovers in an airtight container in the refrigerator for up to 3 days.
  • Serve this simple lasagna twist with warm garlic bread for dipping.
