Ingredients

Scale
  • 1 tablespoon olive oil
  • 1 pound boneless, skinless chicken breasts, cut into bite-sized pieces
  • 1 medium yellow onion, chopped
  • 2 carrots, peeled and sliced
  • 2 celery stalks, sliced
  • 2 cloves garlic, minced
  • 1/4 cup all-purpose flour
  • 4 cups chicken broth
  • 1 cup water
  • 1 teaspoon dried Italian seasoning
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 (16 ounce) package potato gnocchi
  • 1/2 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 2 cups fresh spinach

Instructions

  1. Heat the olive oil in a large pot or Dutch oven over medium heat. Add the chicken pieces and cook until browned on all sides. Remove the chicken and set it aside.
  2. Add the chopped onion, carrots, and celery to the pot. Cook until the vegetables soften, about 5 to 7 minutes.
  3. Add the minced garlic and cook for 1 minute until fragrant.
  4. Sprinkle the flour over the vegetables and stir constantly for 1 minute to cook out the raw flour taste.
  5. Slowly whisk in the chicken broth and water until the mixture is smooth. Stir in the Italian seasoning, salt, and pepper.
  6. Bring the mixture to a simmer, then return the cooked chicken to the pot. Reduce the heat to low, cover, and cook for 10 minutes.
  7. Add the gnocchi to the simmering soup and cook according to package directions, usually about 3 to 5 minutes, until they float.
  8. Stir in the heavy cream and grated Parmesan cheese. Heat through gently, but do not boil after adding the cream.
  9. Stir in the fresh spinach until it wilts into the soup.
  10. Serve immediately. This soup is a great alternative to using meal planning services for a quick dinner.

Notes

  • For a richer flavor, substitute Italian sausage for the chicken. Brown the sausage first and drain excess fat before adding the vegetables.
  • If you want to use a slow cooker, brown the chicken and sauté the vegetables separately, then combine everything except the cream and spinach in the slow cooker. Cook on low for 4 hours. Stir in the cream and spinach during the last 30 minutes.
  • This recipe is a good option when you are looking for alternatives to best meal delivery services for weeknight cooking.
