This recipe delivers a rich, velvety tomato bisque that tastes gourmet but comes together quickly. We roast the tomatoes for deep flavor, then blend them with cream for a silky smooth texture, making it the best tomato bisque recipe for a cozy weeknight meal.

Ingredients

Scale
  • 2 (28 ounce) cans whole peeled tomatoes, fire-roasted preferred
  • 1 large yellow onion, roughly chopped
  • 4 cloves garlic, peeled
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 cup chicken broth (or vegetable broth for vegetarian)
  • 1/2 cup heavy cream
  • 1 tablespoon butter
  • 1 teaspoon sugar
  • 1/4 cup fresh basil leaves, packed

Instructions

  1. Preheat your oven to 400 degrees Fahrenheit.
  2. Pour the canned tomatoes (with their juice) into a baking dish. Add the chopped onion and whole garlic cloves to the dish.
  3. Drizzle the vegetables with olive oil, salt, and pepper. Toss gently to coat.
  4. Roast for 20 minutes, or until the edges of the tomatoes start to caramelize slightly.
  5. Carefully transfer the roasted tomato mixture (including all the pan juices) to a large saucepan. Add the chicken broth and sugar. Bring the mixture to a simmer over medium heat.
  6. Remove the saucepan from the heat. Use an immersion blender to blend the soup until it is completely smooth and velvety. Alternatively, carefully transfer the soup in batches to a standard blender and blend until silky smooth, then return it to the pot.
  7. Return the saucepan to low heat. Stir in the butter and heavy cream until the butter melts and the soup is fully incorporated and rich. Do not boil after adding cream.
  8. Stir in the fresh basil leaves during the last minute of heating.
  9. Taste and adjust salt and pepper as needed. Serve this rich and creamy soup hot, perhaps with grilled cheese dippers.

Notes

  • For an extra smooth soup, strain the finished bisque through a fine-mesh sieve before adding the cream.
  • If you want a quicker version, skip the roasting step and just simmer the tomatoes, onion, and garlic in the broth for 15 minutes before blending.
  • This soup pairs perfectly with a classic grilled cheese sandwich for dipping.
