Ingredients
Scale
12 large eggs
1/4 cup mayonnaise
1 teaspoon Dijon mustard
1/4 teaspoon salt
1/8 teaspoon black pepper
Green food coloring
Purple food coloring
Instructions
Place eggs in a saucepan and cover with cold water. Bring to a boil, then reduce heat and simmer for 10 minutes. Drain and rinse with cold water.
In a bowl, combine mayonnaise, Dijon mustard, salt, and pepper. Mix well.
Peel the hard-boiled eggs. Place each egg in a small plastic bag. Add a few drops of purple food coloring to each bag, ensuring the eggs are coated. Let sit for 10-15 minutes, or until desired color is reached. Rinse eggs gently under cold water to remove excess dye.
Slice the purple-dyed eggs in half lengthwise. Scoop out the yolks into a separate bowl.
Mash the yolks with a fork. Add the mayonnaise mixture and stir until smooth.
Add green food coloring to the yolk mixture, a few drops at a time, until you achieve a vibrant green color.
Spoon or pipe the green filling into the hollows of the egg white halves.
Arrange the deviled eggs on a platter.
Notes
For a cracked egg effect, gently tap the purple-dyed eggs before placing them in the food coloring.
Make ahead: Prepare the deviled eggs up to 24 hours in advance. Store the egg white halves and the filling separately in airtight containers in the refrigerator. Assemble just before serving.
Presentation: Garnish with finely chopped chives or a small slice of black olive to resemble spider legs for an extra creepy touch.
