Ingredients

Scale
  • 2 pounds Yukon Gold potatoes, cut into 1-inch cubes
  • 4 tablespoons unsalted butter
  • 2 tablespoons olive oil
  • 4 cloves garlic, minced
  • 1 teaspoon dried rosemary
  • 1 teaspoon dried thyme
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 tablespoons fresh parsley, chopped

Instructions

  1. Wash and cut the potatoes into 1-inch cubes.
  2. In a large cast-iron skillet, melt the butter with the olive oil over medium-high heat.
  3. Add the potatoes to the hot skillet in a single layer.
  4. Cook for 10-12 minutes, stirring occasionally, until the potatoes are golden brown and crispy on the edges.
  5. Add the minced garlic, rosemary, thyme, salt, and pepper to the skillet.
  6. Stir well to coat the potatoes and cook for another 2-3 minutes until the garlic is fragrant.
  7. Remove from heat and stir in the fresh parsley.
  8. Serve immediately.

Notes

  • For extra crispy potatoes, do not overcrowd the skillet. Cook in batches if necessary.
  • You can substitute other herbs like sage or oregano.
  • These potatoes pair well with roasted meats, chicken, or as a breakfast side.
