Ingredients
Scale
2 cups cooked day-old rice
1 tablespoon sesame oil
1/4 cup chopped fresh cilantro
1/4 cup chopped fresh mint
1/4 cup chopped green onions
1/2 cup shelled edamame
1/4 cup chopped red bell pepper
1/4 cup chopped cucumber
2 tablespoons toasted sesame seeds
Optional protein: grilled chicken, shrimp, or tofu
Instructions
Spread the cooked rice on a baking sheet. Drizzle with sesame oil and toss to coat.
Toast the rice in a preheated oven at 400°F (200°C) for 15-20 minutes, or until crispy. Let it cool completely.
In a large bowl, combine the cooled crispy rice, cilantro, mint, green onions, edamame, red bell pepper, and cucumber.
If adding protein, include it in the bowl.
In a small bowl, whisk together the dressing ingredients: 3 tablespoons sesame oil, 2 tablespoons rice vinegar, 1 tablespoon soy sauce, 1 teaspoon grated fresh ginger, 1 teaspoon honey or maple syrup, and a pinch of red pepper flakes.
Pour the dressing over the salad and toss gently to combine.
Sprinkle with toasted sesame seeds before serving.
Notes
For extra crunch, ensure your rice is completely cooled before toasting.
This salad is great for meal prep; store the dressing separately and toss just before serving to maintain crispiness.
