A tender and flavorful pot roast cooked in a slow cooker with potatoes and carrots, finished with a savory gravy. This is a perfect set-and-forget meal for a comforting Sunday dinner.

Ingredients

Scale
  • 3–4 pound chuck roast
  • 1 tablespoon olive oil
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • 2 cups beef broth
  • 1 tablespoon Worcestershire sauce
  • 1 tablespoon soy sauce
  • 1 pound baby red potatoes, quartered
  • 1 pound carrots, peeled and cut into 2-inch pieces
  • 1/4 cup all-purpose flour
  • 1/4 cup cold water

Instructions

  1. Pat the chuck roast dry with paper towels. In a small bowl, mix together salt, pepper, garlic powder, onion powder, thyme, and rosemary. Rub the spice mixture all over the roast.
  2. Heat olive oil in a large skillet over medium-high heat. Sear the roast on all sides until browned, about 2-3 minutes per side.
  3. Transfer the seared roast to your slow cooker.
  4. Pour beef broth, Worcestershire sauce, and soy sauce over the roast.
  5. Add the quartered potatoes and carrots around the roast.
  6. Cover and cook on low for 8-10 hours or on high for 4-5 hours, until the roast is fork-tender.
  7. Once the roast is cooked, remove it from the slow cooker and place it on a cutting board. Keep the vegetables warm.
  8. In a small bowl, whisk together the flour and cold water to create a smooth slurry.
  9. Pour the liquid from the slow cooker into a saucepan. Bring to a simmer over medium heat. Gradually whisk in the flour slurry until the gravy thickens. Cook for 2-3 minutes, stirring constantly.
  10. Slice or shred the roast and serve with the vegetables and gravy.

Notes

  • For an even richer flavor, you can add a chopped onion to the slow cooker with the roast and vegetables.
  • If you prefer a thicker gravy, you can increase the amount of flour and water in the slurry.
  • This recipe is great for meal planning and can be easily adapted for different vegetables.
