Ingredients

Scale
  • 1.5 lb ground beef
  • 1 large onion, chopped
  • 2 cloves garlic, minced
  • 1 (15 ounce) can black beans, rinsed and drained
  • 1 (15 ounce) can kidney beans, rinsed and drained
  • 1 (15 ounce) can whole kernel corn, drained
  • 1 (14.5 ounce) can diced tomatoes, undrained
  • 1 (10 ounce) can Ro-Tel (diced tomatoes and green chilies), undrained
  • 1 (10.75 ounce) can condensed cream of mushroom soup
  • 4 cups beef broth
  • 1 tablespoon chili powder
  • 1 teaspoon cumin
  • 1/2 teaspoon dried oregano
  • Salt and black pepper to taste
  • Optional toppings: Shredded cheddar cheese, sour cream, chopped green onions

Instructions

  1. Brown the ground beef in a skillet over medium heat. Drain off any excess grease.
  2. Add the browned ground beef, chopped onion, and minced garlic to the basin of your slow cooker.
  3. Add the rinsed and drained black beans and kidney beans to the slow cooker.
  4. Add the drained corn, undrained diced tomatoes, and undrained Ro-Tel to the slow cooker.
  5. Stir in the condensed cream of mushroom soup, beef broth, chili powder, cumin, and oregano. Mix all ingredients well.
  6. Cover the slow cooker and cook on LOW for 6 to 8 hours, or on HIGH for 3 to 4 hours.
  7. About 30 minutes before serving, taste the soup and add salt and pepper as needed.
  8. Ladle the soup into bowls and top with your preferred toppings like cheese or sour cream.

Notes

  • For a Tex-Mex flavor, add 1 packet of taco seasoning along with the chili powder and cumin.
  • If you prefer a thicker soup, mix 2 tablespoons of cornstarch with 1/4 cup of cold water, then stir this slurry into the soup during the last 30 minutes of cooking.
  • This soup works well for meal planning; leftovers store well in the refrigerator for up to four days.
