Ingredients
Scale
2 lbs yellow onions, thinly sliced
4 cloves garlic, minced
1 teaspoon dried thyme
1 teaspoon salt
1/2 teaspoon black pepper
8 cups beef broth or vegetable broth
1/4 cup dry sherry or white wine (optional)
1 tablespoon Worcestershire sauce
1 tablespoon olive oil
1 tablespoon butter
4 slices crusty bread, toasted
1 cup shredded Gruyere cheese
1/2 cup shredded Swiss cheese
Instructions
In a large skillet, heat olive oil and butter over medium heat. Add sliced onions and cook, stirring occasionally, until deeply caramelized, about 30-40 minutes.
Transfer caramelized onions to your crockpot. Add minced garlic, thyme, salt, and pepper.
Pour in beef broth, sherry (if using), and Worcestershire sauce. Stir to combine.
Cover and cook on low for 6-8 hours or on high for 3-4 hours, until onions are very tender and flavors have melded.
Preheat your broiler. Ladle soup into oven-safe bowls.
Top each bowl with a slice of toasted bread and a generous amount of Gruyere and Swiss cheese.
Place bowls on a baking sheet and broil for 2-3 minutes, or until cheese is melted and bubbly and lightly browned.
Notes
For best flavor, caramelize the onions slowly to develop deep sweetness.
You can make this soup ahead of time and reheat it before serving.
Ensure your bowls are broiler-safe before proceeding.
