Ingredients
Scale
2 large cucumbers, sliced or chopped
4 medium ripe tomatoes, chopped
1/2 small red onion, thinly sliced
1/4 cup olive oil
3 tablespoons red wine vinegar
1 teaspoon dried oregano
1/2 teaspoon salt
1/4 teaspoon black pepper
2 tablespoons fresh parsley, chopped (optional)
Instructions
Prepare the vegetables: Wash and slice or chop the cucumbers and tomatoes. Thinly slice the red onion. Place all prepared vegetables in a large bowl.
Make the dressing: In a small bowl, whisk together the olive oil, red wine vinegar, dried oregano, salt, and black pepper until combined.
Dress the salad: Pour the vinaigrette over the vegetables.
Toss gently to coat all the ingredients evenly.
If using, sprinkle the fresh parsley over the salad and toss once more.
Serve immediately for the crispest texture, or chill for 15 minutes to allow flavors to meld.
Notes
For a Mediterranean style, add 1/2 cup of crumbled feta cheese before serving.
If you are planning your weekly meals, this salad pairs well with grilled chicken or fish. Consider this recipe when looking at meal planning options for light sides.
If you want a slightly sweeter dressing, add 1 teaspoon of sugar to the vinaigrette mixture.
