Make this easy, high-protein dill pickle chicken salad in under 25 minutes. It is creamy, tangy, and perfect for quick lunches or meal planning.

Ingredients

Scale
  • 3 cups cooked, shredded chicken breast
  • 1/2 cup finely chopped dill pickles
  • 1/4 cup finely chopped celery
  • 2 tablespoons finely chopped red onion
  • 2 tablespoons fresh dill, chopped
  • 1/2 cup mayonnaise (or plain Greek yogurt for a lighter option)
  • 2 tablespoons pickle juice (from the pickle jar)
  • 1 teaspoon Dijon mustard
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions

  1. Place the shredded chicken in a large mixing bowl.
  2. Add the chopped dill pickles, celery, red onion, and fresh dill to the bowl with the chicken.
  3. In a separate small bowl, whisk together the mayonnaise (or Greek yogurt), pickle juice, and Dijon mustard until smooth.
  4. Pour the dressing mixture over the chicken and vegetable mixture.
  5. Add the salt and pepper.
  6. Use a spatula or spoon to gently fold all ingredients together until the chicken is evenly coated and the salad is creamy. Do not overmix.
  7. Taste the salad and adjust salt, pepper, or pickle juice as needed for your preferred tanginess.
  8. Cover the bowl and chill in the refrigerator for at least 15 minutes before serving to allow flavors to combine. This salad is excellent for meal planning.

Notes

  • For a low carb chicken salad option, serve this mixture in crisp lettuce cups or bell pepper halves instead of bread.
  • If you are following a keto meal plan, substitute the mayonnaise with avocado oil mayonnaise.
  • To use rotisserie chicken, shred about 1.5 pounds of meat.
  • This recipe is a great high protein lunch base.
