Ingredients

Scale
  • 1 cup shelled pistachios, unsalted
  • 1/2 cup powdered sugar
  • 1/4 cup heavy cream
  • 1/4 teaspoon vanilla extract
  • Pinch of salt
  • 8 ounces good quality dark chocolate, chopped
  • 1/2 cup kataifi dough, thawed if frozen
  • 2 tablespoons melted butter
  • 1 tablespoon granulated sugar

Instructions

  1. Prepare the pistachio cream: In a food processor, combine pistachios, powdered sugar, heavy cream, vanilla extract, and salt. Process until smooth and creamy. Set aside.
  2. Prepare the kataifi: In a small bowl, toss the kataifi dough with melted butter and granulated sugar until evenly coated.
  3. Temper the chocolate: Melt the dark chocolate using a double boiler or microwave in 30-second intervals, stirring between each. Stir until smooth and glossy.
  4. Assemble the bars: Line a small rectangular baking pan (about 8×8 inches) with parchment paper. Pour half of the tempered chocolate into the pan and spread evenly.
  5. Layer the filling: Spread the pistachio cream evenly over the chocolate layer. Sprinkle the prepared kataifi dough over the pistachio cream.
  6. Top with chocolate: Pour the remaining tempered chocolate over the kataifi layer and spread to cover completely.
  7. Chill: Place the pan in the refrigerator for at least 2 hours, or until the chocolate is firm.
  8. Cut and serve: Once firm, lift the chocolate slab out of the pan using the parchment paper. Cut into desired bar shapes.
