Ingredients

Scale
  • 2 cups all-purpose flour
  • 2 teaspoons baking powder
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon salt
  • 1 cup granulated sugar
  • 1/2 cup unsalted butter, softened
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup milk
  • 2 cups peeled, cored, and diced apples (such as Granny Smith or Honeycrisp)
  • 1/2 cup brown sugar, packed
  • 1 teaspoon ground cinnamon (for swirl)
  • 1/4 cup powdered sugar (for glaze)
  • 1 tablespoon milk (for glaze)

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour a standard 9×5 inch loaf pan.
  2. In a medium bowl, whisk together the flour, baking powder, 1 teaspoon of cinnamon, and salt. Set this dry mixture aside.
  3. In a large bowl, cream together the softened butter and granulated sugar until light and fluffy.
  4. Beat in the eggs one at a time, then mix in the vanilla extract.
  5. Alternate adding the dry ingredients and the milk to the butter mixture, beginning and ending with the dry ingredients. Mix until just combined; do not overmix.
  6. In a separate small bowl, toss the diced apples with the brown sugar and the remaining 1 teaspoon of cinnamon until the apples are evenly coated.
  7. Gently fold the cinnamon-sugar apples into the batter.
  8. Pour half of the batter into the prepared loaf pan. Sprinkle a light layer of extra cinnamon sugar (if desired) over the top. Pour the remaining batter over the top.
  9. Bake for 55 to 65 minutes, or until a wooden skewer inserted into the center comes out clean.
  10. Let the bread cool in the pan for 10 minutes before carefully turning it out onto a wire rack to cool completely.
  11. While the bread cools, prepare the glaze: Whisk together the powdered sugar and 1 tablespoon of milk until smooth. Add more milk, a drop at a time, if needed to reach a drizzling consistency.
  12. Once the bread is cool, drizzle the vanilla glaze evenly over the top. Slice and serve this moist apple bread recipe.

Notes

  • For the best texture, use firm, slightly tart apples like Granny Smith.
  • If you prefer a stronger cinnamon flavor, double the cinnamon in the main batter.
  • This bread freezes well once completely cooled and before glazing. Wrap tightly in plastic wrap and foil.
