Ingredients
Scale
1 pound rotini pasta
2 cups cherry or grape tomatoes, halved
8 ounces fresh mozzarella balls (pearls or small balls), drained
1 cup fresh basil leaves, roughly chopped
1/2 cup prepared basil pesto
1/4 cup olive oil
2 tablespoons balsamic vinegar
1 teaspoon salt
1/2 teaspoon black pepper
Instructions
Cook the rotini pasta according to package directions until al dente. Drain the pasta and rinse briefly with cold water to stop the cooking process. Place the cooled pasta in a large bowl.
Add the halved tomatoes, mozzarella balls, and chopped basil to the bowl with the pasta.
In a small bowl, whisk together the pesto, olive oil, balsamic vinegar, salt, and pepper to create the dressing.
Pour the dressing over the pasta and ingredient mixture. Toss gently until everything is evenly coated.
Cover the bowl and chill the salad for at least 30 minutes before serving to allow the flavors to combine.
Notes
For a complete meal, add 1 cup of cooked, shredded chicken breast.
If you prefer a creamier texture, mix 1/4 cup of mayonnaise or Greek yogurt into the dressing mixture.
This salad is great for meal planning and tastes better the next day.
