Make these simple, festive brie bites using puff pastry and cranberry sauce. They are quick to assemble and bake into warm, gooey appetizers perfect for holiday parties or gatherings.

Ingredients

Scale
  • 1 sheet frozen puff pastry, thawed
  • 4 ounces brie cheese, cut into small cubes
  • 1/3 cup cranberry sauce (whole berry or jellied)
  • 1 egg, beaten (for egg wash)
  • Optional: Chopped pecans for topping

Instructions

  1. Preheat your oven to 400°F (200°C). Lightly grease a mini muffin tin.
  2. Unfold the thawed puff pastry sheet on a lightly floured surface. Cut the pastry into 12 equal squares.
  3. Gently press each pastry square into the cups of the mini muffin tin, forming a small cup shape.
  4. Place one small cube of brie cheese into the bottom of each pastry cup.
  5. Top the brie with about 1/2 teaspoon of cranberry sauce. If using pecans, sprinkle a few on top of the sauce.
  6. Brush the exposed edges of the puff pastry lightly with the beaten egg wash.
  7. Bake for 12 to 15 minutes, or until the pastry is puffed and golden brown and the cheese is melted and bubbly.
  8. Let the brie bites cool in the tin for 5 minutes before carefully removing them. Serve warm.

Notes

  • For make-ahead preparation, assemble the bites completely (without the egg wash) and place them on a baking sheet lined with parchment paper. Freeze until solid, then transfer to a freezer bag. Bake directly from frozen, adding 3-5 minutes to the baking time.
  • If you are planning meals for the week, these are a great snack to have on hand, though they are best served fresh.
  • For a different flavor, substitute fig jam or apple butter for the cranberry sauce.
