Make crispy, golden Mexican buñuelos coated in cinnamon sugar. This recipe is simple and perfect for holidays.

Ingredients

Scale
  • 4 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/4 cup granulated sugar
  • 1/4 cup unsalted butter, softened
  • 2 large eggs
  • 1/2 cup water, plus more if needed
  • Vegetable oil, for frying
  • 1 cup granulated sugar, for coating
  • 2 tablespoons ground cinnamon, for coating

Instructions

  1. In a large bowl, whisk together the flour, baking powder, salt, and 1/4 cup sugar.
  2. Cut in the softened butter using a pastry blender or your fingers until the mixture resembles coarse crumbs.
  3. Beat the eggs lightly and add them to the flour mixture. Gradually add the water, mixing until a soft dough forms. You may need a little more water to bring it together.
  4. Knead the dough on a lightly floured surface for about 5 minutes until smooth. Cover the dough and let it rest at room temperature for 30 minutes.
  5. Prepare the cinnamon sugar coating by mixing 1 cup sugar and 2 tablespoons cinnamon in a shallow dish. Set aside.
  6. Heat about 2 inches of vegetable oil in a deep skillet or pot to 350°F (175°C).
  7. Divide the dough into 8 equal pieces. Roll each piece very thin, either by hand or using a tortilla press, into a rough circle or square shape, about 8 to 10 inches wide. You can poke a small hole in the center of each piece to prevent puffing too much.
  8. Carefully place one piece of dough into the hot oil. Fry for about 30 to 60 seconds per side, until golden brown and crisp.
  9. Remove the buñuelo with tongs and immediately drain excess oil on paper towels.
  10. While still warm, dip or sprinkle both sides of the buñuelo generously with the cinnamon sugar mixture.
  11. Repeat with the remaining dough. Serve immediately for the best crispness.

Notes

  • For very thin buñuelos, roll the dough out between two sheets of plastic wrap.
  • If you prefer a syrup coating instead of dry sugar, boil 1 cup water, 1 cup sugar, and 1 cinnamon stick until syrupy, then dip the fried buñuelos in the warm syrup.
