Make this creamy, cheesy Rotel dip in your slow cooker. It combines sausage, Velveeta cheese, and Rotel tomatoes for a simple, warm appetizer perfect for game days or parties.

Ingredients

Scale
  • 1 pound bulk pork sausage
  • 1 (10.75 ounce) can condensed cream of mushroom soup
  • 1 (10 ounce) can Ro-Tel Original Diced Tomatoes and Green Chilies, undrained
  • 1 (16 ounce) package Velveeta pasteurized process cheese product, cut into cubes
  • 1 tablespoon taco seasoning (optional, for extra flavor)

Instructions

  1. Brown the pork sausage in a skillet over medium heat. Drain off any excess grease completely.
  2. Transfer the cooked sausage to a small slow cooker.
  3. Add the cream of mushroom soup, the can of Rotel tomatoes and green chilies (do not drain), and the taco seasoning, if using, to the slow cooker. Stir to combine.
  4. Add the cubed Velveeta cheese product on top of the mixture.
  5. Cover the slow cooker and cook on LOW for 2 hours or on HIGH for 1 hour, stirring every 20-30 minutes until the cheese is completely melted and the dip is smooth and creamy.
  6. Once melted, reduce the heat to the WARM setting to keep the dip ready for serving.
  7. Serve hot with tortilla chips, crackers, or vegetable sticks.

Notes

  • For a ground beef version, substitute ground beef for the sausage and season with taco seasoning.
  • If you are planning your weekly meals, this dip is a great option for simple meal planning.
  • To keep the dip warm for a long party, use the WARM setting on your slow cooker.
