Make this hearty, comforting sausage and rice skillet using only one pot. It is fast, flavorful, and perfect for busy weeknights.

Ingredients

Scale
  • 1 tablespoon olive oil
  • 1 pound smoked sausage, sliced into rounds
  • 1 medium onion, chopped
  • 1 green bell pepper, chopped
  • 2 cloves garlic, minced
  • 1 (10.5 ounce) can condensed cream of chicken soup
  • 1 cup chicken broth
  • 1 teaspoon Cajun seasoning (or to taste)
  • 1/2 teaspoon dried thyme
  • 1 cup uncooked long-grain white rice
  • 1 cup shredded cheddar cheese
  • Salt and black pepper to taste

Instructions

  1. Heat the olive oil in a large skillet or Dutch oven over medium heat. Add the sliced smoked sausage and cook until lightly browned, about 4 to 5 minutes. Remove the sausage and set it aside.
  2. Add the chopped onion and bell pepper to the same skillet. Cook until softened, about 5 minutes. Add the minced garlic and cook for 1 minute more until fragrant.
  3. Stir in the cream of chicken soup, chicken broth, Cajun seasoning, and dried thyme. Bring the mixture to a simmer.
  4. Add the uncooked rice to the skillet, stirring to combine. Cover the skillet, reduce the heat to low, and cook for 15 to 20 minutes, or until the rice is tender and the liquid is absorbed. Do not lift the lid while the rice cooks.
  5. Remove the skillet from the heat. Stir in the cooked sausage.
  6. Sprinkle the shredded cheddar cheese over the top. Cover the skillet again for 5 minutes to allow the cheese to melt.
  7. Taste and add salt and pepper if needed before serving.

Notes

  • For a different flavor profile, substitute the Cajun seasoning with Italian seasoning for a milder taste.
  • If you are interested in organized eating, this simple recipe can fit well into a general meal planning approach.
  • If you prefer a lower-sodium option, look for low-sodium smoked sausage and use low-sodium broth.
