Make this hearty, make-ahead breakfast casserole featuring sausage, cheese, and hashbrowns for an easy family meal or brunch.

Ingredients

Scale
  • 1 pound breakfast sausage, cooked and drained
  • 1 (32 ounce) bag frozen shredded hashbrowns, thawed
  • 1 cup chopped onion
  • 1 cup chopped bell pepper (any color)
  • 10 large eggs
  • 1 cup milk
  • 1 cup cottage cheese
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon garlic powder
  • 2 cups shredded cheddar cheese
  • 1 tablespoon butter, melted

Instructions

  1. Preheat your oven to 375°F (190°C). Grease a 9×13 inch baking dish with melted butter.
  2. Spread the thawed hashbrowns evenly in the bottom of the prepared dish.
  3. Scatter the cooked sausage, chopped onion, and bell pepper over the hashbrowns.
  4. In a large bowl, whisk together the eggs, milk, cottage cheese, salt, pepper, and garlic powder until combined.
  5. Pour the egg mixture evenly over the sausage and hashbrown layer.
  6. Sprinkle the shredded cheddar cheese over the top.
  7. Bake for 40 to 45 minutes, or until the eggs are set and the cheese is melted and lightly golden.
  8. Let the egg bake rest for 5 minutes before slicing and serving.

Notes

  • For make-ahead preparation, assemble the casserole completely (do not bake), cover tightly, and refrigerate for up to 24 hours. Add 10-15 minutes to the baking time if baking directly from the refrigerator.
  • This recipe is high protein and works well for meal planning; slice into portions for easy reheating throughout the week.
  • If you are following a specific diet plan, consider substituting the hashbrowns with cauliflower rice for a low carb breakfast bake option.
